Rice SOOO GOOD people will swear you're part Chinese!!

Rice is one of those foods that is...well... BLAND! We usually use rice to stretch a meal or cut corners, but what happens when you make rice the star of your meal and possibly the main course?? Magic!!

What you need:
2 3/4 Cup water
1 1/2 Cups dry rice
3 Tablespoons oil
2 Eggs beaten
Garlic
1/2 Cup shredded carrots
1 small orange bell pepper
4 Scallions
1/2 Cup Frozen peas
1/3 Cup soy sauce



Cook rice in water - spread on cookie sheet to cool.







Scramble eggs










Add Garlic, Carrots, Bell Peppers, and Scallions
 





Add Rice







Mix well and fry for 2 minutes and add peas and soy sauce.






All done and taste GREAT with the Bourbon Chicken from the last entry!



Also great for a midnight snack!
