Bourbon Drinking Chinese Chickens!

Love Chinese food? Crave Chinese food? Me too, but most of the time i'm to busy worrying about my pocketbook to go to a nice chinese buffet and pig out. For days like this I stay in and feed my craving. How you ask? With the best bourbon chicken ever of course!!!

The first step to making bourbon chicken is knowing how to properly cook chicken. Most people boil chicken which can leave it dry and flavorless ( I do not recommend this method unless making homemade chicken stock, but that is a blog for another day)

Now, For my bourbon chicken I use chicken thighs but feel free to use breast if you like

To properly Roast Chicken Thighs preheat your oven to 400 degrees

COVER your chicken generously with Olive oil. Sprinkle with salt and pepper

Place in oven and forget about it for about 40 minutes

and PRESTO! Perfect roasted chicken!!!

Now take the skin off, debone and shred chicken

In a separate bowl add
(These are Estimations)

4 table spoons of rice vinegar
sriracha chili sauce (add your own amount of heat)
1 clove of crushed garlic
half a lime
1 cup brown sugar (more or less depending on your personal preference)
1/3 cup of soy sauce (BYOC!)
tablespoon hoisin sauce

Add shredded chicken to a dry pan

Add Mixture

Bring to a Boil

Add a few splashes of good bourbon
Cook for about 3 minutes to let the alcohol cook out

REMEMBER LADIES: You can always Add but NEVER subtract when cooking. These measurements are mostly round about estimations Don't drown your chicken in sauce!!

And Always BYOC: Be Your Own Chef!!
