Homemade Salsa!

Salsa, something that is so easy to buy from a can or jar from the grocery store that you might not think to make it yourself, but when made in the comfort of your own home; it’s magical!!


What you will need:

7-8 pounds of tomatoes

1 lemon

2 Jalapenos

1 Tablespoon chopped garlic

Salt & pepper to taste

 1-2 Small red onions

1 package of salsa seasoning (optional)

½ Cup White Vinegar

First, Score your tomatoes and add them to a pot of rapidly boiling water
After about 1 minute remove from water and place in an ice bath (this is called “shocking”) the skins should start to slide off


Remove all of the skins from the tomatoes and core








 Dice tomatoes ( if you want it chunky leave them a little bigger)







Chop your jalapenos, onion and garlic

CHEFS TIP: Using a cheese grater will take less time and create a finer texture on your veggies

Add to a big pot, salt and pepper to taste


Add about 1 teaspoon of lemon zest and ½ cup of white vinegar




Bring to a boil, reduce and simmer for 10 minutes

Also seasonings,onions and jalapenos should be added to taste... This recipe is what fits my flavor profile and can be tweaked to fit any palate


Disinfect 5 pint jars and lids  (you can boil them or place in dishwasher)

Ladle hot salsa in jars and close lids

Place in hot water, bring to boil, leave for 45 minutes
 TIP: place a towel in the bottom of the pot before adding jars to prevent cracking

Cut heat off, let the jars stay in the pot until it is cool enough to handle

Lids should pop to let you know they are sealed
 


Store for up to a year and enjoy fresh salsa all winter!
Its great over chips with a dollop of sour cream!!
