Lets Cream Some Corn

Love Creamed Corn? Does your husband complain about you buying it from a can? Don't fret! Here is a recipe that your family is sure to love!!!

What you will need:
Corn
Milk or Cream
Butter
Flour
Red Pepper Flakes (optional)
Salt
Pepper
Garlic
Sour Cream

First start by shucking and cleaning your corn

Once it is clean and free of silks, cut off the cob
CHEFS TIP: Using a bunt pan is a great idea! Not only does it hold your corn in place, but it also collects the kernels and corn milk while you slice!!

Add butter to a hot pan

Add Corn

slowly add 1/4 cup of chicken stock

Add milk or cream depending on how creamy u want it, add anywhere between 1-3 cups

Add flour to thicken

After 2 or 3 minutes add seasonings

Finish with a big pat of butter for extra Luxuriousness

Once corn has cooked down and is tender and bursting with flavor add a dollap of sour Cream

Simmer about 10 more minutes
Final Result should be a silky creamy corn

Remember ladies: you can ALWAYS ADD but NEVER SUBTRACT when cooking
I suggest adding a little liquid and flour at a time instead of dumping it all at once

Salty Delicious Triangles!!

Why buy a bag of tortilla chips when you can make you own and they are delicious!

What you need:
Warm Salt Water
Corn or Flour Tortillas
Vegetable Oil

First things first.... Put your Vegetable Oil in your pan and turn the heat on!!

Then in a bowl or pan put your warm/hot water. Add salt and stir it up.

Then cut your corn or flour tortillas. We used flour because we like the puffiness of them.

Dip your cut tortilla in the hot water.

Then when your oil is hot enough add the wet tortillas to the oil...

Turn them a couple of times. When the look brown and crispy place them on paper towels to dry.

And Enjoy!!

Tip: For festive chips you can add some food coloring to your water and let the tortilla soak a little longer.

We used Black today....

Then with black coloring you get cool purple chips!!

Hope you all enjoy!!

Hamburger Steak? YES PLEASE!

When it comes to quick easy meals, the hamburger has got to be my favorite “go-to”
But why  not change it up every once in a while??
What you will need:
One pound ground beef
Garlic
Paprika
Salt
Pepper
Red pepper flakes (optional)
1 egg
A pinch of rolled oats

Mix ingredients in a big dish

Rawr!

Mix to combine, roll into a patty shape

add about an inch of oil into a deep pan

Sear The hamburger patties

No matter how bad you want to, DO NOT PRESS THE BURGERS!!!!!  It is second nature to want to press on your burger to make it cook faster, but it also dries out your burger by pushing all of the juices out of the meat. When Cooking burgers Don’t press down and ONLY FLIP burgers ONE TIME!!! To maintain juicy meat =)

What way to make a burger absolutely luscious than to COVER IT IN GRAVY?? Oh yes, our HOMEMADE GRAVY!!

Place burgers on a paper towel and drain.

Add to a dry pan and cover with gravy
Simmer for 4 minutes and serve!

Eat over a big pile of mashed potatoes =)

Let's Talk Herbage

When it comes to fresh herbs, most people don’t have a clue on what to buy or grow.

I have 2 favorite herbs- parsley and rosemary

I use parsley to spruce up almost every dish that I cook, not only does it add a fresh flavor but a nice pop of color! (remember, you eat with your eyes first!)

Rosemary is absolutely amazing on oven baked potatoes with a little olive oil, salt and pepper.

I also love to cover Chicken Thighs in Fresh Rosemary. If you like baked chicken, this will change your life!

All Aboard the Gravy Train!

Gravy is one of those things that most people buy in a package that reads “just add water” when in all honesty; it’s just as easy to make it from scratch!

What you will need:

Butter

Flour

2 cups Chicken or beef stock

Salt & Pepper

Melt 4 tablespoons of butter in a hot pan

Add 3 1/2 tablespoons of flour

Wisk to combine

Slowly add 1/3 of your chicken stock

Wisk until Smooth

Add the remainder of stock
bring to boil
Reduce to simmer
Continue to wisk every few minutes until gravy becomes thick
