Snacks to get you through the hunger phase

I love popcorn. I don't think I know anyone that doesn't. Many people don't know that popcorn can actually help you when you want to cut back. Here are 2 hunger satisfying popcorn recipes.
 
 
What you will need:
 
100 calorie bag of popcorn
1 tablespoon honey
dash of cinnamon
pop your popcorn
 
Mix honey and Cinnamon
Microwave for 10-15 seconds

 
pour over popcorn & enjoy a sweet treat!
(MY FAVORITE)
 
160 Calories total
 








This next recipe is the savory
 
 
What you will Need:
 100 calorie bag of popcorn
1/2 Tablespoon Cajun Seasonings
1 Tablespoon Italian Seasonings
Dash of Pepper
Dash of Turmeric
Dash of dried ginger
 
 
 
Stir to combine & use a SMALL amount on your popcorn.
1/8 teaspoon per bag of popcorn
100 calories total
 


Fruit & Honey Compote

I've been trying to lose weight, cut back and stop baking. (Its harder than it sounds) I'm about to let you guys into a big secret... JUST BECAUSE IT'S GOOD FOR YOU, DOESN'T MEAN IT HAS TO TASTE BAD!! I prefer to eat this warm before the honey gets sticky. This is a super easy, quick recipe for when a craving hits and you want to jump the dieting bandwagon.
 
What you Will Need:
 
16 oz bag of all natural, no sugar added frozen fruit
1/2 cup Pure Raw Honey
1 Tsp Fresh lemon Juice
 
 
Start by adding the lemon juice to the fruit
 
 
 
Heat Honey until boiling
 
 
Add Bag of Frozen Fruit
 
 

 Cook for 2 minutes
Pour in a glass dish
 
 
 
I use this as a base for any dessert when trying to cut back on fat and calories.
This is 130 Calories per serving. Makes 4 servings
 
 
 
SO MANY OPTIONS!!
 
Cool fruit,Add yogurt and make a smoothie
OR
 Top with a crumble and bake for lowfat dessert option
OR
Eat over fat free icecream as a sweet topping
OR
Cool Fruit, Layer with granola  and yogurt
OR
Mix with Hot oatmeal for a special breakfast
OR
Top Pancakes
OR
enjoy alone when a sweet craving hits

Greek Couscous

 
I'm all about side dishes, This particular one is a favorite of mine. This is also great for summer time!
 
 
So before I go into this recipe, I'm sure some of you are asking "What is Couscous?"
Couscous is PASTA!  It is made with Semolina Flour just like Spaghetti or Macaroni. Since it is so tiny it literally cooks in minutes which is why I like it so much. I can make this meal in 10 minutes
 
 

What you will need

1 Cup Couscous
pepperoncinis
kalamata olives
Garlic
Frozen Corn
Feta Cheese
Greek Seasonings (I used dried garlic basil)
1 Cup Water
 
 
This is a TO TASTE recipe. Don't like olives? Dont add them! =)
 This is also great with fresh Tomatos! I just didn't have any on hand
 
I also season with salt, pepper, cajun seasonings and butter
but again, everyone has different tastes.
 

 
 
 
This goes by Quickly.
 Boil Water
Make sure to add a little salt

Add Couscous


Cut off the heat, Cover for 5 minutes
 



 
Slice kalamata olives
Slice pepperoncinis
Saute with Corn and Seasonings
 




by this time your couscous should be ready
Fluff with a fork like you would rice



Add Sauted Veggies
Season to taste
Add feta
(I also added parsley for freshness)

Enjoy!


Delectable Pasta Salad

Everyone has their favorite summertime sidedish. This one is mine! Super Simple, easy to eat and easy on the pockets! I can't tell you how many people i've given this recipe to.


What you will Need
 
2 bags Spiral Veggie Noodles
2 Cucumbers
2 Bottles Red Wine vinaigrette (I use the Wishbone Brand)
1 container Cherry or Grape Tomatoes
Shredded Parmesan or Mozzarella (to taste)

 
This is a boil,slice,dump recipe.
 
Boil your noodles in Salted Water until they are just slightly cooked
Slice Cucumbers
Dump tomatoes
Dump Red Wine Vinaigrette
(DO NOT USE THE ENTIRE 2 BOTTLES!!!)
Be Your Own Chef and add enough for your taste,
it can get strong and overwelming if overdressed
Let sit for an hour
Add Cheese on top

 
 
Taste before Serving to see if it needs more dressing
I usually make this the day before.
Taste so much better on the second day

Erin's Famous Dry Rub

It's that time of the year! Grills all around the country will be firing up soon! Here is my absolute FAVORITE dry rub! I've already used it multiple times this year! I use it on pretty much anything and everything when my hubbs gets in the mood for a little smoke action! If you have any left, pour into a sealed container for up to 6 months!!
 
       Erin's Famous Dry Rub
 
2 Tablespoons cajun seasoning
1 Teaspoons salt
1 Tablespoon dried parsley
1/4 Teaspoon pepper
1/4 Teaspoon Granulated onion
1/4 Teaspoon Garlic Powder
1 Teaspoon Paprika
1 Tablespoon Brown Sugar

Healthy Chicken Taco Pizza

Are you trying to cut back? Lose weight? Eat healthier? Well this is one recipe to help you get through that dieting hump. Not only do you get the joy of a slice of pizza, this helps you with portion control!!!
 
 
What you will need
Ground Chicken
Salt
Pepper
Onion Powder
Garlic Powder
Cajun Seasonings
Low Sodium Pizza Sauce
Crescents
Low fat Cheese
Pepperoni
 
Optional:
Velveeta cheese
lettuce
tomato
sour cream
salsa
 
 
 Season and Brown Ground Chicken
 Unroll crescents. keep  2 crescents together
bake at 350 until golden brown

 

 

 
Add Pizza Sauce to Cooked Crescents



Add Ground Chicken
Low fat Cheese
Pepperoni
 Bake until melted

 Top with melted velveeta,lettuce,tomato,sour cream,salsa..ect

Homemade Biscuits

Who really likes a canned biscuit?? NOT ME!!!
 This recipe is very simple and makes a yummy biscuit!

What you will need:

2 Cups All purpose Flour
1 tablespoon sugar
1 tablespoon baking powder
1 pinch of salt
8 tablespoons of butter
3/4 cup milk


Stir together flour, sugar,salt,baking powder

Cut in butter
YES BUTTER!
Why??
Because Butter has FLAVOR!


It should start to look like Cornmeal

Make a well in your mixture

add milk

mix

add mixture on floured surface

flatten about an inch thick

use a glass or biscuit cutter
 to cut biscuits to ensure they are the same size





Bake 425 for 10-13 minutes
add some extra butter over hot biscuits
