Greek Couscous

 
I'm all about side dishes, This particular one is a favorite of mine. This is also great for summer time!
 
 
So before I go into this recipe, I'm sure some of you are asking "What is Couscous?"
Couscous is PASTA!  It is made with Semolina Flour just like Spaghetti or Macaroni. Since it is so tiny it literally cooks in minutes which is why I like it so much. I can make this meal in 10 minutes
 
 

What you will need

1 Cup Couscous
pepperoncinis
kalamata olives
Garlic
Frozen Corn
Feta Cheese
Greek Seasonings (I used dried garlic basil)
1 Cup Water
 
 
This is a TO TASTE recipe. Don't like olives? Dont add them! =)
 This is also great with fresh Tomatos! I just didn't have any on hand
 
I also season with salt, pepper, cajun seasonings and butter
but again, everyone has different tastes.
 

 
 
 
This goes by Quickly.
 Boil Water
Make sure to add a little salt

Add Couscous


Cut off the heat, Cover for 5 minutes
 



 
Slice kalamata olives
Slice pepperoncinis
Saute with Corn and Seasonings
 




by this time your couscous should be ready
Fluff with a fork like you would rice



Add Sauted Veggies
Season to taste
Add feta
(I also added parsley for freshness)

Enjoy!


Delectable Pasta Salad

Everyone has their favorite summertime sidedish. This one is mine! Super Simple, easy to eat and easy on the pockets! I can't tell you how many people i've given this recipe to.


What you will Need
 
2 bags Spiral Veggie Noodles
2 Cucumbers
2 Bottles Red Wine vinaigrette (I use the Wishbone Brand)
1 container Cherry or Grape Tomatoes
Shredded Parmesan or Mozzarella (to taste)

 
This is a boil,slice,dump recipe.
 
Boil your noodles in Salted Water until they are just slightly cooked
Slice Cucumbers
Dump tomatoes
Dump Red Wine Vinaigrette
(DO NOT USE THE ENTIRE 2 BOTTLES!!!)
Be Your Own Chef and add enough for your taste,
it can get strong and overwelming if overdressed
Let sit for an hour
Add Cheese on top

 
 
Taste before Serving to see if it needs more dressing
I usually make this the day before.
Taste so much better on the second day

Erin's Famous Dry Rub

It's that time of the year! Grills all around the country will be firing up soon! Here is my absolute FAVORITE dry rub! I've already used it multiple times this year! I use it on pretty much anything and everything when my hubbs gets in the mood for a little smoke action! If you have any left, pour into a sealed container for up to 6 months!!
 
       Erin's Famous Dry Rub
 
2 Tablespoons cajun seasoning
1 Teaspoons salt
1 Tablespoon dried parsley
1/4 Teaspoon pepper
1/4 Teaspoon Granulated onion
1/4 Teaspoon Garlic Powder
1 Teaspoon Paprika
1 Tablespoon Brown Sugar



Great on Chicken,Steaks,Ribs,Burgers and MORE!
