Challenge Week Taco Helper Dip

Here is a recipe to make something different out of a prepackaged box of Taco Helper


What you will need:
Taco Helper
Salt
Pepper
Shredded Cheese
Sour Cream
Additional Taco Seasonings
Hamburger Meat
Refried Beans
Pickled Jalapenos
1/2 cup of milk






Brown Hamburger
Add 1/3 of packaged seasonings
(I also added salt,pepper and red pepper flakes)
Drain, set aside


 In another pan
Add 2 tablespoons of butter&rice
Saute until butter is melted

Slowly add 1 1/2 cups of water
Cook for 8 minutes


Add 1/2 cup of milk
and cheese packet
 Add a little more of the taco flavored seasoning
rice is done when tender
Time to layer!!!

Refried beans first
(To zazz up a can of refried beans
Saute in a pan with salt, pepper
 and a small squeeze of lemon juice)
 cheese
 Ground Beef
 Rice mixture
 Cheese
 Repeat
 Bake at 350
until hot and cheese is melted
Let cool 

In a separate bowl
add 1 cup sour cream
and taco seasonings

stir

Add sour cream mixture
to the cooled layered dip
 Add packaged chips
 Jalapenos
 Tomatoes
 Lettuce
 Top with salsa and sourcream


Eat with chips

Simple Fried Chicken

Fried Chicken is one of those southern staples that makes every person think they have the best recipe. Now I won't enter that contest because I know hands down.... I actually have the best one

What you will need:
Chicken-I use legs
hot sauce
salt
pepper
paprika
onion powder
garlic powder
flour

Start off by adding a little oil to your chicken

Add spices and hot sauce

Season to your liking
Massage seasonings into meat


Season your flour

dredge chicken through flour..
*Chicken MUST be at room temp*


test oil by droppin a few drops of flour in your oil
if it looks like this, it's ready

add chicken to hot oil
Cook on medium to medium high
(I use medium)


cook until golden brown


drain on paper towel

Lemon Dill Mayonaise


Wanna vamp up your sandwiches? Tired of the usual?? Well try out this lemon dill mayo! it's DELISH! (You can find dill in the spice aisle in the grocery store, it's usually around $1.00)

What you will need:
Your favorite Mayonaise
Lemon
Dill
Salt
Pepper


Add Mayonaise
Dill
Salt
Pepper
in a small bowl

 Add a squeeze of fresh lemon juice
and stir
(I also kicked it up a notch and added Cayenne)
 simple as that!
Spread over a slice of bread!

Remember that fancy pork loin from the last post?

Add bacon, lettuce and tomato
and have a pork loin BLT with Lemon Dill Mayonaise
YUMMM!








Loin of Pork

This recipe is one that is sure to make your mouth water during the entire cooking process. Not only is it an elegant meal, but it is also an easy one!!!



Cover Loin in Oil
(I use extra virgin olive oil)


add salt,pepper,paprika,
onion powder and garlic powder
 Massage the meat to make
sure seasonings are well distributed

let meat come to room temp



 Spray pan with nonstick cooking spray






 Add loin
If loin is to big, cut in half
before adding to pan

Once loins are in
add 2 tablespoons of butter
 cook low and slow
This loin takes a while to cook
don't get impatient and turn on high
this needs to be cooked on medium  

Flip when loin gets a nice crust on the outside
and turns a dark brown
When Finished cooking
take off heat
 Let loin rest a MINIMUM of 8 minutes
